Product information "Locust bean gum"

The endosperm called part of the carob tree seed contains predominantly long-chain carbohydrates, which are characteristically composed of the simple sugars mannose and galactose. This seed is called ground locust bean gum. The long-chain compounds contained can bind very large quantities of water. While locust bean gum is completely soluble in hot water, its enormous swelling properties come into play in cold water: even small amounts of locust bean gum turn liquids into very stable gel-like substances that are hardly sensitive to heat, acids and salts

Locust bean gum also significantly increases the gelling effect of other vegetable thickeners and is therefore often used in combination. Its swelling properties ensure, for example, that turbidity substances in lemonades are kept in suspension and prevent bread from becoming "old-fashioned".

Locust bean gum is obtained by the action of heat from the seeds of the locust bean tree. It is generally approved for foodstuffs. The only exceptions are untreated foods, foods that the legislator does not want to be modified by additives, and dried foods that swell when eaten.

Shelf life and storage

When stored under dry, cool conditions, the product has a shelf life of at least 2 years after the production date.

Our products are always packaged in pre-packaged packages marked with a batch number and an MHD (imprint or additional label). Until the date of the MHD, the manufacturer guarantees the product's unchanged properties in terms of appearance, taste and processing behaviour. It is not an expiration date as is the case with fresh produce, for example.

The origin of our products

Raw materials are subject to strict quality controls, which we naturally adhere to. When selecting suppliers in Germany and the countries of origin, we ensure that all European standards are met, that the products are tested in the laboratory and that the analytical data comply with the strict product specifications. Our suppliers have many years of experience and all the certifications required to ensure consistently high quality (e.g. ISO 22000, IFS, BRC, FSSC or similar). We regularly audit our suppliers on site in order to convince ourselves of these high standards and to control all processes in the supply chain.

We focus on sustainability and want to meet the highest demands. That is why Golden Peanut offers you products of German quality. All products, which originally come from different countries all over the world, are checked in Germany for residues and carefully controlled. Only if a perfect quality is determined, the raw materials are processed further in Germany or filled into finished packages. In order to ensure marketability, we have our product labels checked for correct declaration before they are placed on the market.

Top Qualität

Ich habe mich zuerst gewundert, dass der Preis nunmehr so hoch ist und habe nachgefragt ob das so richtig sei. Der Kundenservice wies mich auf die aktuelle Lage hin und bei diesem hochwertigen Produkt könne ich mir sicher sein, dass es wirklich geprüft und frei von Schadstoffen ist. Das hat mich überzeugt. Als Allergiker gebe ich viel Geld für Ersatzprodukte aus - auf dieses Johannisbrotkernmehl möchte ich nicht verzichten!

Gute Qualität und günstig.

kleine Mengen Johannisbrotkernmehl kosten immens viel. Wenn nicht immer ALLES unbedingt Bio sein muss, sondern an solchen kleinen, eher unbedeutenden Zutaten man etwas sparen möchte, dann passt das hier. Es dickt gut an, - ob kalt oder heiß, ob ungekocht oder gekocht, - und man kann es auch gut hineinnehmen in Brote oder Kuchen, die mit Hirse, Quinoa gebacken sind, - also kein Klebereiweiß haben. Ich nehme davon auch etwas für meine Vollkorn-Vital-Waffeln (ganz ohne Weizen oder Gluten gemacht).

Geiles Zeug;)

habe jobromehl erst im rahmen meiner low carb ernährung enddeckt, wieso hab ich das nicht früher gefunden?
das ist wirklich ein tolles produkt. ich verwende es zum soßen binden, für kuchen auf low carb basis, für selerie puffer, alles was etwas gebunden werden muss bekommt einen löffel voll ab. im vergleich zum herkömmlichen kohlenhydrat reichen soßenbinder ist es eine klasse sache. es bindet stärker und man benötigt somit nur kleine mengen, was den preis dann relativiert. geschmaklich hat es keine auswirkungen auf das endprodukt, jedoch sollte man es gut mit z.b. schneebesen einrühren, damit später keine klümpchen da sind. hier muss ich sagen was soßenbinder nicht so schnell am klumpen wie johbromehl, aber was solls man stellt sich halt drauf ein, leicht einrieseln lassen gut verrühren und alles ist tip top. :) würde es wieder kaufen, ist günstiger als im einzelhandel und ein schönes produkt. einzige den unterschied zu guarkernmehl kann ich nicht beurteilen, da ich das noch nicht getestet habe.

Sehr gutes Bindemittel.

Ich bin in der Anwendung von Johannisbrotkernmehl noch ein Anfänger. Dieses löst sich in kaltem Wasser sehr leicht auf. Kräftiges Umrühren reicht aus, damit es sich auflöst. In warmen, selbst gemachtem Ketchup reicht das nicht. Aber mit einem Pürrierstab läuft es wieder perfekt. Gerade für selbst hergestellten Ketchup - mache ich aus gesundheitlichen Gründen ohne Zucker selbst - erreicht man erst mit Johannisbrotkernmehl die für Ketchup typische Konsistenz, die deutlich ins honigartige geht. Was mich echt beeindruckt hat ist der Geschmack. Ich habe es in Wasser aufgelöst und durch erwärmen angedickt. Die honigartige Masse schmeckt einfach nur nach Leitungswasser, kein fremder Geschmack und keine Krümel oder so. Bis jetzt eine klare Kaufempfehlung. Update: Ich hab das Johannisbrotkernmehl nun auch zum Andicken von Saucen verwendet. Johannisbrotkernmehl dickt außerordentlich ergiebig an. Man muss es sehr vorsichtig dosieren. Etwas zu viel und man erhält eine Art Saucen-Pudding, der nicht mehr fließt. Also, weniger ist mehr! Außerdem muss es, wie andere Stärken auch, kalt angerührt werden. Ich hab es heute in kaltem Rotwein angerührt. Löst sich perfekt auf und man kann es dann in die warme Sauce geben. Weiterhin klare Kaufempfehlung.

Tolles Produkt

Ich habe mir dieses Produkt gekauft, da ich mich leider inzwischen glutenfrei ernähren muss. Johannisbrotkernmehl ist sehr wichtig bei der glutenfreien Ernährung. Johannisbrotkernmehl wird zum verdicken verwendet und das macht es ohne Probleme. Es ist auch sehr ergiebig, da man nicht viel braucht. Ich verwende es für meine Mehlmischungen. Die im Handel erhältlichen Mehlmischungen haben mir gar nicht so zugesagt, da man unter anderen dann immer nach speziellen Rezepten backen muss und dadurch meiner Meinung nach einem ein Stück weit an Lebensqualität genommen wird, da man dann seine alten liebgewonnenen Rezepte/ Gerichte gar nicht mehr essen/ zubereiten kann. Mit meinen selbst gemischten Mehlmischungen kann ich alles backen wie vorher. Danke für das tolle Produkt.
