Sodium hydrogen carbonate is a sodium salt of carbonic acid and belongs to the group of hydrogen carbonates. The compound should not be confused with sodium carbonate (soda, molecular formula NaHCO3). Occasionally the obsolete and chemically incorrect trivial names sodium bicarbonate and sodium bicarbonate are also used for sodium hydrogen carbonate. In the trade the connection is offered also under the names Speisesoda, Backsoda, Speisenatron as well as the brand names Bullrich salt and emperor Natron. Sodium hydrogen carbonate is a colourless, crystalline solid which decomposes above a temperature of 50 °C to sodium carbonate by splitting off water and carbon dioxide.

Sodium hydrogen carbonate E-500 (ii) 100
Sodium hydrogen carbonate or sodium bicarbonate is used in foods as baking agents and in effervescent powders. There is a mixture of sodium bicarbonate with a solid acid such as citric acid. But it also occurs in bath tablets and in fire extinguishing powders. It is also used for softening water. Sodium carbonates include soda (sodium carbonate, disodium carbonate), sodium (sodium bicarbonate, sodium hydrogen carbonate) and sodium sesquicarbonate, which is a mixed crystal of soda and sodium. While soda is mainly used to regulate the acidity of drinking water and to disintegrate cocoa and milk protein, sodium bicarbonate is mainly used in baking powders. Sodium carbonates are degraded by contact with acids. This releases carbon dioxide. This way, for example, doughs increase their volume - they rise and become loose.
Manufacture:
Sodium hydrogen carbonate is a white powder that is resistant to dry air. When heated above 65°C, it decomposes into sodium carbonate (soda), carbon dioxide and water (2 NaHCO3 Na2CO3 + CO2 + H2O). Sodium dissolves in water with a weak alkaline reaction. Sodium carbonate is produced by the chemical reaction of ammonia and carbon dioxide in a sodium chloride solution.
Raw materials are subject to strict quality controls, which we naturally adhere to. When selecting suppliers in Germany and the countries of origin, we ensure that all European standards are met, that the products are tested in the laboratory and that the analytical data comply with the strict product specifications. Our suppliers have many years of experience and all the certifications required to ensure consistently high quality (e.g. ISO 22000, IFS, BRC, FSSC or similar). We regularly audit our suppliers on site in order to convince ourselves of these high standards and to control all processes in the supply chain.
