Product information "Sodium diacetate E262 (ii)"
Golden Ingredients Sodium diacetate and is produced by a simple chemical reaction from acetic acid. At room temperature, it forms a white crystalline powder that dissolves very well in water. The fine granules, also known as E262 (ii), are used in foods such as bread, mozzarella or canned fish to lower the pH and curb the growth of bacteria. With the addition of sodium acetate, the pH value (i.e. the acidity) of food can be controlled and stabilised, hence the name: acidity regulator. Sodium acetates preserve baked goods and are therefore also a reliable preservative.
Sodium diacetate is a popular acidity regulator not only in the bread, fish and meat industries but also generally in large kitchens, in the catering trade and in private households. Mainly because it is neutral in taste and very easy to handle.
The reliable bacterial inhibitor is also very effective and popular in many whey, salad and cheese preparations. Producers of creamy salads such as meat or shrimp salad also rely on sodium diacetate because it softens sour tastes and meat, fish and seafood retain their freshness and beautiful colour for longer thanks to the additive.

Shelf life and storage
When stored under dry, cool conditions, the product can be kept for at least 2 years after the production date.
Our products are always packaged in pre-packaged containers that are marked with a batch number and a best-before date (imprint or additional label). Until the best-before date, the manufacturer guarantees the unchanged properties of the product in terms of appearance, taste and behaviour during processing. This is not an expiry date, as is the case with fresh produce, for example.
