Sodium acetate anhydrous is a food additive that is widely used as an acidity regulator and preservative for canned and jarred fruit and vegetables, bread, fish, delicatessen salads, mayonnaises and salad dressings. The white granules dissolve easily in water. The additive is considered absolutely harmless and is therefore just as popular in large kitchens, upscale restaurants, the meat, bread and delicatessen industries as it is in private kitchens.The advantages are obvious: ingredients stay fresh longer, acidic preparations, especially salads, sauces, yoghurts and desserts, seem milder in taste.
