Baking Soda – Sodium Bicarbonate in a Bucket
Baking soda – a classic with an amazing number of uses Some ingredients have one specific job in the cupboard. Baking soda definitely isn't one of them. Whether you're baking, cooking, cleaning or experimenting with your own household recipes, this simple white powder is remarkably versatile. Golden Peanut® Baking Soda consists of 100% sodium bicarbonate (NaHCO₃), also known as sodium hydrogen carbonate. It is supplied in food-grade quality and is approved as the food additive E 500(ii). This makes it a useful basic ingredient not only for the kitchen, but for many everyday household applications as well. When baking soda gets to work in your baking Muffins, cakes, cookies, pancakes and many other baked goods can benefit from baking soda. When sodium bicarbonate comes into contact with an acidic ingredient, carbon dioxide is released. The resulting tiny gas bubbles help loosen the dough or batter and increase its volume. This is also why baking soda and citric acid make such a useful combination: when they come together in the presence of moisture, they react and release carbon dioxide. Much more than a baking ingredient Baking soda has long been valued as a versatile household basic. In addition to cooking and baking, it can be used for numerous cleaning and laundry applications and in homemade household preparations. For anyone who prefers versatile basic ingredients to a cupboard full of highly specialized products, baking soda is therefore particularly useful to keep on hand. Baking soda, sodium bicarbonate or sodium carbonate? The terminology can sometimes be confusing. Baking soda is sodium bicarbonate or sodium hydrogen carbonate with the chemical formula NaHCO₃. Sodium carbonate, on the other hand, has the formula Na₂CO₃ and is a different substance. It is more strongly alkaline and should not simply be substituted for baking soda. And one more potential source of confusion: in English-language recipes, “baking soda” generally means pure sodium bicarbonate. It is not the same as baking powder, which normally contains sodium bicarbonate together with acidic components and other ingredients. Why is baking soda so versatile? The answer lies in its chemical properties. Sodium bicarbonate is mildly alkaline. It can react with acids and, under the right conditions, release carbon dioxide. When heated, it also decomposes to form sodium carbonate, carbon dioxide and water. These simple properties are behind many of the different ways baking soda can be used in the kitchen and around the home. A basic ingredient for people who like to make things themselves If you enjoy baking from scratch, trying your own recipes or making simple household preparations yourself, baking soda gives you plenty of possibilities. Instead of being tied to one specific application, you decide what you want to use it for. Our larger bucket sizes are also practical when baking soda is used regularly or in larger quantities – whether at home, in a small business or for your own formulations. What exactly is sodium bicarbonate? Sodium bicarbonate is a well-established raw material used in food production and numerous other applications. Industrially, it can be produced through processes such as the Solvay process, in which substances including sodium chloride and carbon dioxide are used. For our Golden Peanut® Baking Soda, what matters in everyday use is simple: you receive food-grade sodium bicarbonate as a versatile basic ingredient for baking, cooking and household applications.

Citric acid monohydrate
Citric acid is one of the most widespread acids in the plant kingdom and occurs as a metabolic product in all organisms. Lemon juice, for example, contains 5-7% citric acid. It is also found in apples, pears, sour cherries, raspberries, blackberries, currants, conifers, mushrooms, tobacco leaves, wine and even milk. Citric acid is produced industrially by fermenting sugary raw materials such as molasses and maize. Aspergillus niger strains are used for fermentation. Citric acid not only has a lime-solvent effect due to its acid effect, but also due to the formation of a calcium complex. It is often used in detergents to avoid the unpleasant smell of vinegar cleaners. However, the complexes are not heat-resistant and decompose when heated to calcium citrate which is relatively difficult to dissolve. Citric acid can be used, for example, to decalcify kettles, immersion heaters, taps, shower heads, dishwashers or washing machines. As an intermediate product of the energy metabolism (citric acid cycle), citric acid is a component of every living cell. The human metabolism converts one kilogram of it daily. In addition to its function as the most commonly used acidifier, citric acid is used in the food industry for a number weiterof technological applications. Because of its ability to form complexes with heavy metals, it receives fats, colours, flavours and vitamin content in many foods as an antioxidant. When sterilizing cream and milk and melting cheese, it prevents the protein from coagulating. Citric acid supports the reddening of meat and also improves the baking properties of doughs and flours. Citric acid is also used as a technical adjuvant in the production of edible fats and the treatment of fresh fish. Manufacture: Citric acid is produced biotechnologically with the aid of microorganisms, in particular the mould fungus Aspergillus niger. Glucose or molasses serve as the nutrient medium.

Sodium Diacetate E 262(ii)
Sodium Diacetate E 262(ii) – acidity regulator for professional food formulations Golden Ingredients® Sodium Diacetate is a food additive E 262(ii) for professional food processing. The product consists of 100% sodium diacetate and is used as an acidity regulator. Sodium diacetate is a compound of sodium acetate and acetic acid and is suitable for formulations where the pH value needs to be adjusted in a controlled way. Sodium Diacetate E 262(ii) – clearly defined and functional Unlike anhydrous sodium acetate E 262(i), sodium diacetate also contains acetic acid. This gives it a different technological profile and makes it suitable for applications where a reduction or regulation of pH is required. For professional users, it provides a clearly defined single ingredient for a range of food applications. For bread, mozzarella and canned fish Typical applications include bread, mozzarella and canned fish. In these products, sodium diacetate can be used to lower the pH and thereby help create conditions that limit the growth of certain bacteria. This makes E 262(ii) particularly relevant for product categories where acidity regulation and microbiological stability play an important technological role. For development, production and formulation optimisation In professional food manufacturing, the appropriate use of functional additives depends on the specific product, formulation and process. Golden Ingredients® Sodium Diacetate E 262(ii) can be incorporated into existing production processes as well as product development and formulation optimisation. The appropriate dosage depends on the intended technological function and the legal conditions applicable to the relevant food category. Controlled pH regulation for professional applications Sodium diacetate is suitable for users who need to influence the acidity of a formulation in a targeted way. Especially in products such as bread, cheese products or canned fish, pH regulation can be an important part of technological product design. The ingredient should always be used in accordance with the specific formulation and processing requirements. Golden Ingredients® – functional ingredients for commercial processing Golden Ingredients® is aimed at food manufacturers, artisan producers and other professional processors. Sodium Diacetate E 262(ii) provides a 100% acidity-regulating ingredient for targeted use in development, production and further processing.
