NUR BIO® organic guar gum is a natural alternative to starch for thickening foods. This natural product with 5,000 cps is 10 times more effective than conventional cornstarch thickeners and produces a soft, smooth, and homogeneous texture.

This vegan binding agent is extracted from the seeds of the guar bean, which is mainly cultivated in northwestern India and western Pakistan. The natural thickening agent is virtually odorless and tasteless, has an extra-high viscosity of 5,000 cps, and is soluble in both cold and hot foods. Our NUR BIO® guar gum is a reliable thickening, binding, and gelling agent and is therefore suitable for a wide range of preparations such as:

Similar to lactose products, guar gum in sauces and dressings ensures that solid ingredients do not separate from liquid ingredients. In ice cream production, guar gum prevents the formation of ice crystals. Products mixed with guar gum thicken and acquire a wonderfully creamy consistency.

Good to know: The specification 5000 cps describes the viscosity of the product. The higher the viscosity, the thicker the product becomes when mixed with water or liquid. Guarkernmehl is available in two common viscosities: 3500 cps and 5000 cps. 5000 cps is referred to as high viscosity.

Shelf life and storage

When stored in dry, cool conditions, the product has a shelf life of at least 2 years after the date of manufacture.

Our products are always packaged in ready-made packaging marked with a batch number and a best-before date (printed or on an additional label). The manufacturer guarantees that the product will retain its appearance, taste, and processing properties until the best-before date. This is not an expiration date, as is the case with fresh produce, for example.

Recommended use

Starch can be replaced with guar gum in recipes. One-tenth of the amount of starch normally used is sufficient for guar gum with a viscosity of 5000 cps.

The carob tree (Ceratonia siliqua) belongs to the legume family and is native to the Mediterranean region and the Near East. It bears brown, hard pods as fruit, inside which are the small brown carob seeds. These are separated from the pod, dried and finely ground into gluten-free flour. Locust bean gum (LBG) is more of a powder than a flour in terms of consistency. The purely natural thickening agent is odourless and tasteless and binds and stabilises food both hot and cold.
