Ascorbinsäure ist die chemische Bezeichnung für Vitamin C und zählt zu den natürlichen Antioxidantien. Sie ist in vielen Obst- und Gemüsesorten sowie Milch enthalten. Im menschlichen Organismus ist Vitamin C an der Bindung von freien Radikalen, sowie an der Bildung von Kollagen und am Kohlenhydratstoffwechsel beteiligt. Unser Produkt entspricht der europäischen Lebensmittelverordnung für Zusatzstoffe und ist als Konservierungsmittel in Obst, Gemüse, Fleischwaren und Konserven geeignet. Weitere Anwendungen sind die Stabilisierung des pH-Wertes bei der Produktion von Getränken, Nahrungsergänzungsmitteln und Kosmetikprodukten. Reinheitskriterien gem. EU-Verordnung 2008/84/EG.
Wirkung: Ascorbinsäure verzögert qualitätsmindernde Gärungs- und Reifeprozesse, die durch den Einfluss von Sauerstoff entstehen: z.B. Braunverfärbungen bei angeschnittenem Obst und Gemüse. In Fleischwaren wird Ascorbinsäure oft zusammen mit Nitritpökelsalz verwendet um die Umrötung von Fleischwaren zu stabilisieren. Auch die Klebereigenschaften von Vollkornmehlen kann durch den Einsatz von Ascorbinsäure positiv beeinflusst werden.
Herstellung: Ascorbinsäure wird in einem mehrstufigen Verfahren (Reichenstein-Prozess), durch Fermentation von nicht genmodifizierten Rohstoffen (Glucose aus Mais- oder Tapiokastärke) gewonnen. Im gesamten Produktionsprozess werden keine gentechnisch veränderten Organismen verwendet.
Ascorbinsäure ist ohne Höchstmengenbeschränkung für Lebensmittel allgemein zugelassen. Ausgenommen sind lediglich unbehandelte und solche Lebensmittel, die nach dem Willen des Gesetzgebers nicht durch Zusatzstoffe verändert werden sollen.
Hinweis: Zahlreiche Lebensmittel (z.B.Getränke) werden mit Ascorbinsäure angereichert, um den Vitamin-Gehalt zu erhöhen. Nur in diesem Fall darf sie als Vitamin C deklariert werden.

Ascorbinsäure zur Anreicherung von Speisen und Getränken mit Vitamin C in Wasser, Saft oder Smoothies einrieseln lassen und verrühren. Auch Joghurt oder leicht säuerliche Speisen kann man mit Ascorbinsäure gut verfeinern. Aufgeschnittenes Obst wird nicht so schnell braun, wenn man es in Ascorbinsäure wälzt.
Eine zu hohe Einnahme von Ascorbinsäure ist normalerweise unbedenklich, da der Organismus des Menschen die Menge an Vitamin C, welche er nicht benötigt, ausscheidet.

Only if a perfect quality is determined, the raw materials are processed further in Germany or filled into finished packages. In order to ensure marketability, we have our product labels checked for correct declaration before they are placed on the market.
