Product information "Golden Peanut Gourmet® Agar Agar"
Agar Agar – plant-based gelling without gelatine
Want to set jam, jelly or a dessert without using animal-based gelatine? Golden Peanut Gourmet® Agar Agar is a plant-based gelling agent made from red algae that is suitable for both sweet and savoury recipes. The fine powder is neutral in taste, vegan and highly efficient – ideal when you want to create your own recipes and control the consistency yourself.
Strong gelling power – a little goes a long way
Agar agar belongs to the group of hydrocolloids and is designated E 406 in food applications. It can bind liquids and form stable gels. Agar agar has a strong gelling action and is therefore used sparingly. As a practical guide, ½ tsp agar agar corresponds to approximately 4 sheets of gelatine.
The amount you actually need depends on your recipe and the consistency you want to achieve. A soft dessert cream requires a different level of firmness from a sliceable jelly, so when trying a new recipe it is worth starting with a smaller amount and carrying out a gelling test.
From jams and desserts to savoury cooking
You can use agar agar for jellies, jams, preserves, fruit spreads, creams, puddings, mousses, cake glazes and other desserts. It is also suitable for sauces and savoury gelled dishes. Because agar agar is neutral in taste and forms clear gels, the flavour of your other ingredients remains the focus.
When making your own fruit spreads, you can control gelling and sweetness separately. Unlike ready-made gelling sugar, the gelling agent is not already combined with a large amount of sugar – so you decide how sweet you want your fruit preparation to be.
Heat first, then allow to cool
Correct processing is important with agar agar. First stir the powder into the liquid and then heat the preparation sufficiently until the agar agar has completely dissolved. The actual gel develops during cooling. Do not judge the final consistency while the preparation is still hot or add more powder too quickly.
For a simple gelling test, place a small amount of the hot mixture on a cold plate and allow it to cool. This gives you a quick indication of how firm your preparation will become once fully cooled.
For creative kitchen ideas too
Agar agar can do much more than classic jellies and desserts. It is also used in molecular cuisine when unusual shapes and textures are required. Depending on your recipe, you can use it to create gel pearls, cubes, strips and other decorative elements.
Golden Peanut Gourmet® Agar Agar consists of 100% Agar Agar E 406 with no added ingredients – a versatile plant-based kitchen staple for anyone who enjoys gelling, experimenting and getting creative with food.

Directions for Use
Golden Peanut Gourmet® Agar Agar is a highly efficient plant-based gelling agent for sweet and savoury foods. You can use it for jellies, jams, preserves, fruit spreads, desserts, creams, puddings, mousses, cake glazes and other gelled dishes.
As a practical guide: ½ tsp agar agar corresponds to approx. 4 sheets of gelatine.
First stir the agar agar into the liquid and then heat sufficiently while stirring until the powder has completely dissolved. Continue according to your recipe and allow to cool – the gel forms during cooling.
The amount required depends on the individual recipe and the consistency you want to achieve. A soft cream requires less than a firm, sliceable jelly. For new recipes, start with a smaller amount and gradually work towards your preferred consistency.
For jams, preserves & fruit spreads
Agar agar provides the gelling function without already being combined with a large amount of sugar. This allows you to control sweetness and gelling separately and adjust your fruit preparation to your own taste.
For desserts, creams & savoury dishes
You can also use agar agar for jellies, puddings, creams, mousses, cake glazes, sauces and other gelled preparations. Because it is neutral in taste, the flavour of your other ingredients remains the focus.
Our tip: Do not judge the consistency while the preparation is still hot. For a gelling test, place a small amount of the hot mixture on a cold plate and allow it to cool. This makes it easier to assess how firm the preparation will become once fully cooled.

Spitzenqualität
Super saubere Qualität, zum kleinen Preis. Wie alles von Golden Peanut. Gerne wieder. Lässt sich halt nur warm verarbeiten und muss dann kalt gestellt werden. Man kann damit den Raindrop Cake herstellen.

Tolles Produkt, sehr ergiebig

Super!
