Carob bean gum is a natural binder with many good properties: The vegan thickener, which is extracted from the seeds of the carob tree, is odourless and tasteless. The carob tree bears brown, hard pods as fruits, inside of which lie the carob seeds. These are detached from the pod and ground into gluten-free flour.

What do I need carob bean gum for? The finely ground powder dissolves very well warm and cold and can be stirred into sauces, soups, pasta and dairy products to thicken them. It loosens dough, acts as a stabiliser and is an important ingredient in the production of ice cream. Even small amounts of locust bean gum turn liquids into very stable gel-like substances that are hardly sensitive to heat, acid and salts.

What else can Locust Bean Gum do? The flour also enhances the gelling effect of other vegetable thickeners and is therefore often used in combination with guar gum or xanthan gum. Its swelling properties ensure, for example, that cloudy substances in lemonades do not settle to the bottom and prevent bread from becoming "stale".

100% natural product: Locust bean gum is a purely vegetable food additive and is harvested and processed without the use of genetic engineering. The product originates from the Mediterranean region and is tested in accredited laboratories in Germany for microbiology, ethylene oxide, pesticides and other residues.

Shelf life and storage

When stored under dry, cool conditions, the product can be kept for at least 2 years after the production date.

Our products are always packaged in pre-packaged containers that are marked with a batch number and a best-before date (imprint or additional label). Until the best-before date, the manufacturer guarantees the unchanged properties of the product in terms of appearance, taste and behaviour during processing. This is not an expiry date, as is the case with fresh produce, for example.
