Product information "Ascorbic acid vitamin C"

Ascorbic acid is the chemical name for vitamin C and is one of the natural antioxidants. It is contained in many fruits and vegetables as well as in milk. In the human organism, vitamin C is involved in the binding of free radicals, as well as in the formation of collagen and in carbohydrate metabolism. Our product complies with the European food regulation for additives and is suitable as a preservative in fruit, vegetables, meat products and canned food. Other applications include stabilising the pH value in the production of beverages, food supplements and cosmetic products. Purity criteria according to EU regulation 2008/84/EC.

Area of application: Ascorbic acid delays quality-reducing fermentation and ripening processes caused by the influence of oxygen: e.g. brown discolouration of cut fruit and vegetables. In meat products, ascorbic acid is often used together with nitrite curing salt to stabilise the reddening of meat products. The gluten properties of wholemeal flours can also be positively influenced by the use of ascorbic acid.

Production: Ascorbic acid is produced in a multi-stage process (Reichenstein process) by fermentation of non-genetically modified raw materials (glucose from maize or tapioca starch). No genetically modified organisms are used in the entire production process.

Golden Ingredients Ascorbic acid is generally permitted for foodstuffs without maximum quantity restrictions. The only exceptions are untreated foods and foods that the legislator does not want to be modified by additives.

Note: Many foods (e.g. beverages) are fortified with ascorbic acid to increase the vitamin content. Only in this case may it be declared as vitamin C.

Shelf life and storage

When stored under dry, cool conditions, the product can be kept for at least 2 years after the production date.

Our products are always packaged in pre-packaged containers that are marked with a batch number and a best-before date (imprint or additional label). Until the best-before date, the manufacturer guarantees the unchanged properties of the product in terms of appearance, taste and behaviour during processing. This is not an expiry date, as is the case with fresh produce, for example.

Application

Ascorbic acid for enriching food and beverages with vitamin C. Sprinkle into water, juice, or smoothies and stir. Yogurt or slightly sour foods can also be refined with ascorbic acid. Cut fruit will not brown as quickly if you roll it in ascorbic acid.

Excessive intake of ascorbic acid is normally harmless, as the human body excretes any vitamin C that it does not need.
