Product information "Agar Agar ground"

Agar Agar, also known as Japanese gelatine, is mainly known in Asia. There it is highly appreciated for its high gelling capacity. Since half a teaspoon of agar agar corresponds to about four sheets of gelatine, it is a lot more productive.

Historical background:

Agar Agar is obtained from certain red sea algae that grow mainly off the coast of Japan and have long been used for cooking in this country. Once, it is said, a Japanese woman threw food leftovers outside, which thawed after freezing in the cold night and during the day in the warm sun. A delicate jelly had formed.

Use:

Agar Agar is insoluble in cold water. Only at temperatures above 80° C is complete solution obtained. When it cools down, a gel forms. Agar Agar belongs to the polysaccharides with the strongest gel formation capacity (limit concentration around 0.5%). The temperature at which gel formation occurs (35-39°C) is far below the melting temperature of the gel (80-90°C), which distinguishes it significantly from all other gel-forming polyaccarides.

Shelf life and storage

When stored under dry, cool conditions, the product has a shelf life of at least 2 years after the production date.

Our products are always packaged in pre-packaged packages marked with a batch number and an MHD (imprint or additional label). Until the date of the MHD, the manufacturer guarantees the product's unchanged properties in terms of appearance, taste and processing behaviour. It is not an expiration date as is the case with fresh produce, for example.

Application

Agar agar is particularly suitable for:

Agar agar can be used to make fine jellies, for example. Half a teaspoon of agar agar is equivalent to about four sheets of gelatin. Agar agar is therefore much more economical than conventional gelling agents. We always recommend doing a gelling test. Gel formation is only visible once the mixture has cooled down. The product is available with a gel strength of 800 g/cm².

Lieferung sehr schnell! das agar agar ist geruchsneutral! das ist mir sehr wichtig, gelieren tut es so, wie es sollte! auf jeden fall weiter zu empfehlen!

Sehr gut

Alternative zu anderen Geliermitteln . Die Dosierung sollte man vorher mit kleineren Mengen testen . Ist sehr stark abhängig vom Obst .

Tolles Produkt, sehr ergiebig

Habe mir dieses Pulver gekauft, da bei gewissen Marmeladen (gerade wenn Alkohol dabei ist) manchmal das Gelieren mit dem Pektin (welches im Gelierzucker enthalten ist) nicht klappt. Anscheinend setzt Alkohol das Gelieren dann wohl teilweise außer Kraft. Aber nach Beimischung des Agar Agar hat das einwandfrei funktioniert. Allerdings muss man mit der Dosierung sehr vorsichtig sein, da das Pulver sehr gut wirkt (daher lieber mit weniger anfangen und dann evtl. nachdosieren). Der Beutel ist sehr ergiebig und hält mir vermutlich noch Jahre.

Spitzenqualität

Super saubere Qualität, zum kleinen Preis. Wie alles von Golden Peanut. Gerne wieder. Lässt sich halt nur warm verarbeiten und muss dann kalt gestellt werden. Man kann damit den Raindrop Cake herstellen.

Marmelade kochen mit wenig Zucker

Agar Agar ist vegan und ein Naturandicker. Mit etwas Ausprobieren findet man die richtige Menge. Es ist geschmacksneutral und man kann die zugefügte Zuckermenge selbst variieren. Super!

Xanthan Gum
Xanthan gum is an additive approved by the EU and is used as a binder, thickener and stabilizer in food technology. In the creative kitchen, Xanthan Gum is used in dressings and sauces to stabilize oil/vinegar emulsions due to its properties. Golden Peanut Apple Pectin belongs to the group of vegetable gelling agents. Pectin is mainly obtained from dried apple pomace and lemons, but is also found in sugar beet, raspberries, currants, quinces and other fruits. Pectin is rich in fibre, but almost free of calories. It is suitable for preserving jam or jelly. Because the gelling process begins quickly when APfelpektin is used, the fruit does not need to be heated unnecessarily for long and valuable vitamins are retained. Just like agar agar, pectin cannot be used in a cold state. Applications: Manufacture of jams and jellies Manufacture of ice cream Preparation of saturated beverages Production of cake glaze Application example for a cake glaze: Mix approx. 100 ml fruit juice with a little lemon juice and sweeten as desired.
