Lavender - whole flowers dried
Who does not know the lavish purple fields of lavender that stretch like a purple carpet through the landscape in Provence? But lavender not only looks pretty, it's also a popular herb with many properties. The dried flowers were already used in ancient Rome as a bath additive or for washing laundry because of their extraordinary, calming, yet intense scent. The blue-violet flowers of the lavender bush are not only an intensely fragrant feast for the eyes, but are also attractive in taste and can be used as a raw material for tea or as a natural flavor additive. Today you can usually find lavandin, a hybrid of real lavender and tall spear lavender, in the vast fields. However, it is not suitable for consumption because it has a slightly soapy taste. The Speiklavender is mainly used for the production of dried flowers and decorative items and is often colored purple with color pigments. The real lavender (Lavandula angustifolia) originally comes from the Mediterranean region. It only grows in warm regions and especially on dry, rocky slopes. Most of the time, real lavender can be found in the higher regions that are pampered by the sun. Lavender prefers a mild climate, but today's varieties also feel good in our latitudes. You can often find lavender as a companion to roses in the home garden, as the fragrances keep pests away. Lavender is a popular herb for preparing tea or fine meals, but because of the essential oils it is also used for the production of high-quality cosmetics or in the pharmaceutical industry, for example as an additive in care products such as creams, soaps, shampoos or in the production of perfumes. Only real lavender can be used for these applications. The Golden Naturals® lavender flowers are untreated, real lavender (Lavandula angustifolia) in food quality, which still contains all essential oils and has an intense scent. The product is suitable for consumption and does not contain any colorings, preservatives or additives. Also, Golden Naturals® lavender flowers are not treated with hairspray or spray varnish to preserve their purple color. We completely refrain from coloring the flowers, which naturally fade more and more over the course of the weeks after they have dried. The lavender flowers are harvested from June to September as soon as flowering begins. If the lavender is to be used for the production of oil or as a raw material for tea, it is only harvested when the plant is in full bloom. Depending on the growing area and the size of the farm, it is harvested by hand or with special harvesting machines. The woody part of the stalk at the top of the branch and the remains of the herb are harvested as well, as it contains a large part of the valuable essential oils that are required in the production of lavender oil or for making tea. Then the lavender branches are gently dried at 30 - 45 ° C. In doing so, they slowly lose their purple color until they are almost completely gray-brown about 6 months after harvest. The fragrance and the good ingredients, however, are retained for at least 2 years after production. After drying, the dry parts of the plant around the flowers gradually disintegrate and, if the product has already been filled, settle on the bottom of the container. However, they are not waste, but contribute a considerable part to the fact that the lavender flowers smell wonderful. For example, they can be used to make tea. However, they should stay in the colander as they are hard and straw-like. Application tip from our cooking team: Golden Naturals® lavender flowers are versatile. They are suitable as a delicious decoration on cakes, pastries or ice cream and, like other spices, can be used in food preparations. However, they should always be moistened well before consumption, otherwise they are very hard. In tea, soups, sauces and dough, lavender softens by itself when it is enriched with liquid.

Agar Agar ground
Agar Agar, also known as Japanese gelatine, is mainly known in Asia. There it is highly appreciated for its high gelling capacity. Since half a teaspoon of agar agar corresponds to about four sheets of gelatine, it is a lot more productive. Historical background: Agar Agar is obtained from certain red sea algae that grow mainly off the coast of Japan and have long been used for cooking in this country. Once, it is said, a Japanese woman threw food leftovers outside, which thawed after freezing in the cold night and during the day in the warm sun. A delicate jelly had formed. Use: Agar Agar is insoluble in cold water. Only at temperatures above 80° C is complete solution obtained. When it cools down, a gel forms. Agar Agar belongs to the polysaccharides with the strongest gel formation capacity (limit concentration around 0.5%). The temperature at which gel formation occurs (35-39°C) is far below the melting temperature of the gel (80-90°C), which distinguishes it significantly from all other gel-forming polyaccarides.

Golden Peanut Apple Pectin belongs to the group of vegetable gelling agents. Pectin is mainly obtained from dried apple pomace and lemons, but is also found in sugar beet, raspberries, currants, quinces and other fruits. Pectin is rich in fibre, but almost free of calories. It is suitable for preserving jam or jelly. Because the gelling process begins quickly when APfelpektin is used, the fruit does not need to be heated unnecessarily for long and valuable vitamins are retained. Just like agar agar, pectin cannot be used in a cold state. Arrowroot starch was originally extracted from the tropical arrowroot tuber from the rainforests of Brazil and has many uses. The South American Arawak people are even said to have used the starch flour to treat wounds caused by poisoned arrows. Today, the arrowroot species are native to the warm and humid tropics to subtropics of South and Central America, southern Mexico, the Caribbean islands and Central America to South America. The genus Maranta was listed by Carl von Linné in the 16th century in honour of the Italian botanist, physician and writer Bartolomeo Maranta (1500-1571). This is how the arrowroot got its name, the Maranta family. The snow-white, gluten-free Paleo flour, also known under the English name "arrowroot", is particularly popular in English and American cuisine due to its purity and high binding quality. Unlike tapioca starch, arrowroot starch has no flavour of its own. Arrowroot flour is particularly good at binding casseroles, soups, sauces as well as puddings, jellies, jams, groats, couvertures and glazes that must not be allowed to boil because, unlike corn or potato starch, it thickens at lower temperatures.To ensure that the arrowroot powder binds without lumps, it should first be mixed with a little cold water until smooth. Recommendation: Stir 2-3 tbsp. arrowroot flour into 2-3 tbsp. cold liquid. Then stir the mixture into the simmering liquid to be bound with a whisk. Simmer, stirring constantly, until the desired consistency is reached. Corn or potato starch often clouds the dishes after setting. Arrowroot starch, on the other hand, binds sauces, soups and jellies very clearly and leaves no taste of its own. Moreover, arrowroot flour binds about twice as strongly as wheat flour. The fine starch is also excellent as breadcrumbs. To give baked goods an airy structure, you can replace 10 percent of the flour with arrowroot flour. Important: Arrowroot starch should always be combined with other binding agents, such as oils and fats, so that the baked goods remain nice and moist. Ascorbic acid is the chemical name for vitamin C and is one of the natural antioxidants. It is contained in many fruits and vegetables as well as in milk. In the human organism, vitamin C is involved in the binding of free radicals, as well as in the formation of collagen and in carbohydrate metabolism. Our product complies with the European food regulation for additives and is suitable as a preservative in fruit, vegetables, meat products and canned food. Other applications include stabilising the pH value in the production of beverages, food supplements and cosmetic products. Purity criteria according to EU regulation 2008/84/EC.Area of application: Ascorbic acid delays quality-reducing fermentation and ripening processes caused by the influence of oxygen: e.g. brown discolouration of cut fruit and vegetables. In meat products, ascorbic acid is often used together with nitrite curing salt to stabilise the reddening of meat products. The gluten properties of wholemeal flours can also be positively influenced by the use of ascorbic acid.Production: Ascorbic acid is produced in a multi-stage process (Reichenstein process) by fermentation of non-genetically modified raw materials (glucose from maize or tapioca starch). The alga has been around for 3.5 billion years and is one of the oldest organisms in the world.
